| How do you prevent over
cooking pasta? The first thing you need is a good pasta, but if you are trying a new brand for the first time, check the recommended cooking time and then knock at least 1 minute off. As you approach the required time check it and while it is still quite al-dente strain off the water. If you are adding a hot sauce this will always cook the pasta a little more and you can always return it to a little heat, but REMEMBER: it is always better to serve undercooked pasta than overcooked! |
