Traditional cheeses - total traceability
From the start Medeghini ensures total traceability "La filiera"
from its own feed plant, its own dairy farms and its own laboratories
producing starters thus ensuring that the consumer gets top quality
dairy products. The milk is subject to strict quality controls throughout
and is tested for its suitability before going on to be processed into
a range of cheese and dairy products.
Medeghini produces a wide range of traditional soft and hard Italian
cheeses.
The five "doc" cheeses all produced
according to specific regulations: Grana Padano - possibly the best
known of traditional Italian cheeses; Gorgonzola - eaten younger
than in the past and so now enjoyed for its milder taste and lighter
texture; Provolone - originally from the South and a popular
eating cheese; Taleggio - originating from Lombardy, creamy and
rich-tasting perfect for eating and cooking; Quartirolo - the
younger brother of taleggio, matured for less time and having a distinct
"chalky" taste.
With generations of experience Medeghini has successfully developed
and marketed three of its own unique cheeses: Cortinella - fresh
and light, but tasty; Mazzanella - similar to caciotta,
with a very delicate flavour; Adamello - with a shape and taste
reminiscent of traditional mountain cheeses.
Medeghini also matures Parmigiano Reggiano, which like the Grana
Padano is available in all sizes as well as grated.
