The five “DOC" cheeses all produced according to specific regulations:
- Parmigiano Reggiano can be identified through the oval hot-iron mark;
- Grana Padano - possibly the best known of traditional Italian cheeses;
- Gorgonzola - a distinctly Italian flavour;
- Provolone - a very popular table cheese;
- Taleggio - creamy and rich-tasting, a perfect table cheese and brilliant for cooking;
