Not just vegetables in jars

Valpollino is based in the heart of and clearly gets its name from La Val Pollino national park: a protected area renowned for its natural beauty and wildlife.

With a strong Calabrian tradition and care Valpollino produces a range of grilled vegetables in oil. Vast are the packaging possibilities, from 290g "gift" jars to 1kg catering packs (the jars go up to 2.9kg too).

Grilled aubergines, artichokes, peppers and courgettes; every type of pesto as well as some more unusual salsas and sauces; dried mushrooms; sun-dried tomatoes, Sun-touch® tomatoes and chilli peppers to blow your socks off!

What do you do with dried mushrooms?

Dried wild mushrooms are perhaps one of the most convenient ways to enjoy delicious fungi (without going out into the woods and searching for it yourself). To re-hydrate you should use just enough tepid water to cover the mushrooms and leave for at least 4-6 hours, but preferably overnight. If the mushrooms have soaked up all the water add a little more. The drying process really keeps the flavour of the mushrooms and don't forget you can always use any excess water in your recipe.
